Ingredients for the falafels

  • 200g chick peas
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp cumin, ground
  • 1 tbsp salt
  • 1 tbsp lemon juice
  • ½ tsp baking powder
  • 1 bunch of basil, finely chopped
  • 1 bunch of mint, finely chopped
  • Peanut oil for frying

Preparing the falafels

Soak the chickpeas in cold water overnight, then drain and rinse in cold water. Blend in a mixer then add all the other ingredients and continue blending for a short time. Put the mixture in a bowl and taste again if required. Leave to stand for 20 minutes. Form fritters with two coffee spoons and deep-fry them at 170 °C until they are golden brown. Drip off excess oil onto kitchen roll and serve with the avocado cream.

Ingredients for the avocado cream

  • 1 avocado
  • 1 lime, juice and zest
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2 tbsp finely chopped basil

Preparing the avocado cream

Blend all the ingredients for the avocado cream into a smooth mixture and season to taste.
