Ingredients for the Elevenses

  • 50 ml gin
  • 25 ml Earl Grey cordial
  • Cucumber tonic water
  • Block ice
  • Long cucumber peel as garnish

To prepare the Elevenses

Shake the ingredients in a shaker and pour into a highball glass. Then top up with cucumber tonic water and garnish with a long cucumber peel.

Ingredients for the Earl Grey cordial

  • 500 ml water
  • 10 g Earl Grey tea
  • 250 g sugar
  • 5 g citric acid

To prepare the Earl Grey cordial

Add the water to a vacuum bag. Stir in the sugar and citric acid to dissolve. Add the Earl Grey tea. Remove air using the vacuum drawer. Cook sous vide (Vacuisine) for 3 mins at 65 °C. Strain away the tea with a superbag.
