• 250g butter, soft
  • 225g sugar
  • 1 pinch salt
  • 2 eggs
  • 2 egg yolks
  • 1 untreated lemon, lemon peel
  • 500g flour
  • 1 vanilla pod, scraped
  • sugar pearls for decoration


Knead all the ingredients into a dough then leave for 2 hours wrapped in tin foil. Sprinkle the dough with flour and roll to a thicknessof 7mm. Cut cookies from the dough using different cookie cutters and garnish with sugar pearls. Put the finished Mailänderli in thefridge for 15 minutes then bake in the oven for around 7 minutes on the Hot Air setting at 200 °C.
