Ingredients

  • 600 g skrei fillet (4 pieces each weighing 150 g)
  • 100 ml brown butter
  • 6 eggs
  • 1 red onion
  • 1 fresh horseradish
  • 1 bunch of dill
  • 200 g shrimps
  • Salt, pepper
  • 2 lemons

Preparing

Marinate the shrimps with a little lemon juice and salt. Boil the eggs for 6 minutes, then briefly hold them under cold water and remove the shells. Roughly slice the eggs and add the finely chopped red onions. Fold the shrimps into the mixture and heat the entire dish in the Combi Steam MSLQ for approx. 10 minutes until it reaches the correct temperature. Season the dish to taste again with a little salt, pepper and lemon juice, and fold in the finely chopped dill. Sprinkle the skrei with brown butter and season with salt and pepper. Following this, cook at Steam 58 degrees for 10 minutes.

To serve

Place the fish in the middle of the plate, serve the shrimps and egg on top of the skrei. Pour hot brown butter over the fish and garnish with plucked dill and roughly chopped horseradish.
