The two key factors in ensuring wine stays in top condition during storage are darkness and, above all, a constant ambient temperature. A temperature of 11-12 °C is ideal. If the ambient temperature is higher – say 16-18 °C – you should bear in mind that the wine will mature faster. Wine should not be kept in temperatures of more than 18 °C.
