Big Green Egg’s Flavour Fair

Tour de Suisse: Together with Fabian Fuchs and Marco Böhler in the Food Truck.

No matter where you look, Big Green Egg is everywhere. This year once more, the third Big Green Egg’s Flavour Fair attracted lots of visitors, who watched numerous top chefs prepare their specialities on the legendary green egg. And thanks to the covered wet-weather alternative, the changeable April weather failed to put a damper on the event. Around 1,000 guests did not want to miss this food party on Aarau racecourse. And right in the middle of it all – the V-ZUG Food Truck. Organized by Marco Böhler, head chef at the “Stucki” restaurant in Basel, our truck’s involvement was a resounding success. As a proud partner of the Flavour Fair and Big Green Egg, we were delighted to be there.

In the Food Truck, Fabian Fuchs from the EquiTable Restaurant in Zurich once again proved that cooking in a confined space was no problem for him. Fabian, who prefers to prepare his recipes using only organic and ideally regional products and Fairtrade ingredients, had one main aim: to create a harmony of flavours. He succeeded in his aim once more with his green asparagus creation, served with kale capers, buckwheat and a green herb sauce! And Marco Böhler, our Stucki barbecue expert, got stuck in with the three Big Green Eggs – positioned next to the Food Truck – working flat out for the numerous visitors. He treated those present to tasty veal chipolatas with apple and herb mustard and shiso, deftly demonstrating how to get to grips with the green machines. In doing so, he proved that the possibilities are virtually endless: barbecuing, simmering, smoking, braising and baking – all these techniques are possible!

The two top chefs created some wonderful dishes and worked up a fine sweat in the process. But one thing was clear: despite their different culinary orientations, they were an unbeatable team.

The event offered plenty of scope for exciting discussions amongst the guests. At the end of the day, both the gourmet fans and the barbecue fans were more than happy! And they all agreed on one thing – there absolutely has to be a follow-on event next year!
