

Ingredients for the Dove
- 35 ml grapefruit blanco tequila
- 15 ml yuzu liqueur
- 10 ml honey syrup
- 15 ml lime juice
- Grapefruit soda
- Block ice
- Grapefruit wedge as garnish
To prepare the Dove
Shake the ingredients in a shaker and pour into a highball glass with a sea salt rim. Then top up with grapefruit soda. Garnish with a grapefruit wedge.
Ingredients for the grapefruit tequila
- 250 ml blanco tequila
- 15 g grapefruit peel
To prepare the grapefruit tequila
Add ingredients to a vacuum bag and remove air using the vacuum drawer. Infuse under vacuum at room temperature for 30 mins. Strain with a superbag to remove the peel.
