Ingredients for the Dove

  • 35 ml grapefruit blanco tequila
  • 15 ml yuzu liqueur
  • 10 ml honey syrup
  • 15 ml lime juice
  • Grapefruit soda
  • Block ice
  • Grapefruit wedge as garnish

To prepare the Dove

Shake the ingredients in a shaker and pour into a highball glass with a sea salt rim. Then top up with grapefruit soda. Garnish with a grapefruit wedge.

Ingredients for the grapefruit tequila

  • 250 ml blanco tequila
  • 15 g grapefruit peel

To prepare the grapefruit tequila

Add ingredients to a vacuum bag and remove air using the vacuum drawer. Infuse under vacuum at room temperature for 30 mins. Strain with a superbag to remove the peel.
